The Bar After Dark

There is an hour here that belongs to nobody — after the last swim, before the first plate. The light goes copper, the fans slow down, and the bar starts its quiet second life.
The shaker works through the house favourites: fresh juice from the morning market, island cocktails built around king coconut and lime, and an espresso martini that has ended more early nights than the tide.
Order a sundowner, take the chair facing west, and let the horizon do the rest.
Dinner can wait. It always does, here.
